Wholesome Beauty Recipes- Organic Carrot & Coconut Cream Pie

Use All Organic Ingredients:

Pie Filling:
1/2 cup Muscat or other Sweet Organic Dessert Wine
1/3 cup Unsulfured Dried Apricots
1 cup Unsulfured Dried Apples, chopped
3 Organic Apples, grated
1/3  Cup Raisins
1/4  Cup Walnuts
1 1/2  Cups Organic Carrot,
shredded

1/2  Cup Zucchini Squash, shredded
1/2  Cup Beets, shredded
1/2 cup Unsweetened Shredded Organic Coconut
3/4  Tsp Cinnamon
1/4  Tsp Nutmeg

Pie Crust:

1 Cup Raw Organic Almonds
1 Cup Unsulfured, Organic Dates, pitted
1 TB Organic Chia Seed Gel*
1/3 Cup Organic Steel Cut Oats, ground


Prepare:

For filling: Marinate chopped dry apples and apricots in wine overnight in refrigerator or at room temperature for 1 hour.
Mix , raisins,
grated apples and walnuts in food processor or blender;  add in the soaked & dried fruit-wine mixture and process until combined well.  Drain and press excess moisture from carrots, zucchini and beets and mix into apple mixture along with coconut, cinnamon and nutmeg.

For Pie Crust:  Place almonds and steel-cut oats in food processor and process until very finely ground.  Add in the dates and process until chopped and mixed well.  Add in the Chia seed gel and pulse to mix in.  Press mixture into a pie plate to form a shell.  (You can
add more Chia Seed Gel if mixture is too dry.)

Add filling to prepared pie crust.

* To make Chia Seed gel, mix 3 TBS Chia Seed in 3/4 cup water and let stand for at least 15 minutes.  Process in food processor into a paste.

Delicious with Macadamia Cream Topping:  In a food processor or blender, blend 1 1/3 Cups Macadamia nuts, 1 cup Soy, Hemp or Almond milk and 2/3 Cup Pitted Dates until smooth and creamy.
