Wholesome Beauty Recipes- Organic Black Bean Salad & Avocado Baskets

Wholesome Beauty Recipes- Organic Black Bean Salad & Avocado Baskets
Prep Time: 20 Minutes

Use All Organic Ingredients:
1 1/2 Cups cooked Organic Black Beans or one 15 oz. can no-salt-added or low sodium Organic Black Beans, drained and rinsed
2 organic Plum Tomatoes, diced
3/4 cup frozen Organic Corn, thawed
1/4 cup diced Organic Red Bell Pepper
1/4 cup diced Organic Red Onion
1/4 cup diced Organic Pineapple
2 Tbs chopped Organic Cilantro plus extra for Garnish
1/2 Organic Jalapeno Pepper, diced and seeded
2 Tbs Organic Red Wine Vinegar
1/2 Organic Lime, juiced
1/4 tsp ground Organic Cumin
3  Organic Avocados


Prepare:
Combine all ingredients, except avocados and refrigerate for 1 hour.

Cut the avocados in half and remove the pits.  Scoop out about 2 tablespoons of avocado from each half and mix into the salad.  Fill the avocado baskets with the salad.  Garnish with chopped cilantro.

Serves: 6  - Enjoy! (:
